Recipe Highlights

This Smoked Cornish Hens recipe is perfect for your Country Smokers Wood Pellet Smoker. Easy to prepare and smoke, the Cornish hens are topped with a lemon honey glaze for a nice combination of zesty, sweet flavors. Since hens are small and take less time to cook than a whole chicken, this is a convenient recipe for a weekend dinner with your family.

How many Servings Per Cornish Hen

A typical rule of thumb is to have 1 Cornish hen per person and a couple of extra for those with bigger appetites.

Cooking Instructions

  1. Start up your Country Smoker. Once it’s fired up, set the temperature to 225°F.
  2. Generously sprinkle the Cornish hens with chicken seasoning and let the hens sit at room temperature for up to one hour.
  3. In a small saucepan, melt together the butter and honey over low heat. Squeeze ½ lemon into the honey mixture and remove from the heat.
  4. Smoke the hens and baste with the honey butter mixture. Continue to baste every 45 minutes, until the thickest part of the hen reaches 160°F.
  5. Remove from the smoker and allow the hens to rest for 5 minutes, then serve with the remaining sliced lemon.
