This Cheesy Chive Twice Baked Sweet Potato recipe is as delicious, as it is nutritious! Create a pleasant twist on this classic Holiday side dish. The sweet potato is baked twice to ensure even cooking and smoky flavor. Serve with any with any holiday-themed entrée and your guests will be making reservations for next year!


Cooking Instructions


  1. Open the lid and turn your Country Smoker to “smoke”.
  2. Once the fire pot has caught, close to lid and turn the grill to 400°F.
  3. Rinse your sweet potatoes and then lightly rub them with olive oil (you probably won’t use all 2 Tbs, and that’s fine).
  4. Using a fork, poke holes in the sweet potatoes.
  5. One your Country Smokers grill is to temp, add the bacon rack, with your peppered bacon – cook til done and crispy. 10-15 minutes, then remove to cool.
  6. While your bacon is cooking, place your sweet potatoes on indirect flame/heat and cook for about 50 minutes depending on the thickness of your potatoes.
  7. Remove the sweet potatoes from the grill and let cool.
  8. Reduce the heat to 350°F (for when you put the potatoes back on your grill).
  9. While your potatoes are cooling, add the sour cream, cheese, chives (2 tbs-ish) and crispy, crumbled peppered bacon into a mixing bowl.
  10. Once the potatoes have cooled enough to touch, cut them in half lengthwise.
  11. Using a spoon, scoop out the insides of the sweet potatoes and add them to the mixing bowl – careful not to dig through to the skin! Leave enough skin and potatoes behind to create a boat-like shell.
  12. Sprinkle the mixture with pepper, paprika, garlic powder, onion powder and sea salt and mix together. Season to taste then add the mixture back into the potato skins. *Side note: Be aware of how much salt you are adding - taste the mixture as you go. Bacon has A LOT of salt in it, and salt is something you can’t really take back or correct when you’re cooking.
  13. Can top with additional cheese if desired.
  14. Place the sweet potato skins on a non-stick baking sheet, and bake for 15-20 minutes, or until the cheese is melted and the tops are slightly browned.
  15. Remove from your Country Smoker and let cool. Top with additional sour cream or bacon or add some butter – whatever you want! And enjoy!!
