This quick and easy fire roasted street corn on the grill takes minutes to prepare and cook, so you can do it all while your meat rests. Topped with cotija cheese, garlic salt, and paprika, it’s a tasty veggie that goes with just about any protein.

A lighter take on Mexican Street Corn, this classic street food recipe omits the heavier sour cream and mayonnaise but keeps the light and flaky cotija cheese. Feel free to add some lime juice and chili powder if you want a little more punch.

Cooking Instructions

  1. Turn your Country Smoker to “smoke” and spray the grates with oil. Once the fire pot has caught, close the lid and crank it up to 400°F.
  2. Remove the corn from the husks and try to get as many of the little strings off the corn as possible.
  3. Once the grill is to temperature, grill the corn. Place the husked corn directly onto the grates and grill for about 3 minutes, or until the kernels begin to turn golden brown. Turn over and repeat until charred. When all sides are browned, remove the corn from the grill.
  4. Melt the butter for easier application and use the basting brush to brush the butter onto the corn. Season with paprika and garlic salt to taste.
  5. Sprinkle the cotija cheese on after seasoning the corn (optional).
  6. Enjoy! Serve with your favorite protein.
