Are you wondering if you can smoke baby back ribs in about 3 hours and still get the same tender and smoky ribs you’re used to? The truth is you most certainly can. This 3 hour Smoked Baby Back Ribs recipe, dubbed the Country Smokers 1 – 2 Ribs recipe, is simple and straight forward. Apply your rub and let your racks rest for about 30 minutes. Turn on the grill and smoke your ribs on low (180°F) for 1 hour. Then turn up your smoker to 250°F and smoke for 2 hours. Take them off the grill and let your ribs rest for at least 15 minutes and then they’ll be ready to serve. They probably won’t be “fall off the bone” but plenty tender to pull off the bone without much effort.

Pro Tip

Apply a thin coat of yellow mustard evenly over the rips before applying the rub. It’ll help the rub stick to the ribs better and you won’t taste the mustard.

Cooking Instructions

  1. Remove ribs from the refrigerator and pat dry.
  2. Be sure to remove the membrane from the back of the slab.
  3. Mix the seasonings in a small bowl and pour into an empty spice bottle.
  4. Spread the rub liberally over the front and back of both racks of ribs and let your ribs rest in the fridge for at least 30 minutes.
  5. Fire up your Country Smoker and set to SMOKE mode (180°F).
  6. Lay both racks on the smoker with the meat side facing up.
  7. Smoke for 1 hour.
  8. Mix the apple juice and apple cider vinegar in a food safe spray bottle.
  9. Turn the smoker up to 250°F and spritz both racks of ribs. You want to have evenly spritzed the surface of both racks, but not too much where the rub is sliding off the ribs.
  10. Close the lid and smoke for another 2 hours, returning only to spritz the ribs every 30 minutes or so.
  11. If you want sauce, apply the sauce before removing and let them smoke at the same temp for an additional 20 minutes.
  12. Remove the ribs and let them rest at least 15 minutes before serving. If you are resting longer than 15 minutes, be sure to wrap them in aluminum foil and let them rest in a cooler or oven.
