4-6 Cornish Hens
4 Tbsp Unsalted Butter
1 Tbsp Honey
1 ½ Lemon
4 Tbsp Chicken Seasoning

Directions

Start up your Country Smoker. Once it’s fired up, set the temperature to 225°F.
Generously sprinkle the Cornish hens with chicken seasoning and let the hens sit at room temperature for up to 1 hour.
In a small saucepan, melt together the butter and honey over low heat. Squeeze ½ lemon into the honey mixture and remove from the heat.
Smoke the hens and baste with the honey butter mixture. Continue to baste every 45 minutes, until the thickest part of the hen reaches 160°F.
Remove from the smoker and allow the hens to rest for 5 minutes, then serve with the remaining sliced lemon.
